Phil tries the summer TikTok trend - cowboy caviar!

Phil’s trying his hand at the latest foodie trend to sweep Tik Tok - Cowboy Caviar! This colourful chopped salad is popping up everywhere, so Phil's taking us to the deep south with his recipe for cowboy caviar and carolina-rub chicken drumsticks. Bursting with flavour and good for the wallet, he’s taking cupboard staples and transforming them into the ultimate chopped salad and spicy chicken. 

Carolina Drumsticks With Cowboy Caviar 

Serves: 6

Ingredients 

For the salad:

1 x 400g can black beans rinsed and drained

1 x 400g can black eyed peas rinsed and drained

8 ripe fresh chopped tomatoes

1 small jalapeno, seeded and finely diced

1 can sweetcorn

1 medium avocado, roughly chopped

1 x red pepper, seeded and finely diced

2 small red onions, finely diced

6 tbsp chopped fresh coriander

3-4 tbsp extra virgin olive oil

juice of 3 limes

2 tbsp runny honey

pinch chilli powder

1 tsp ground cumin

salt and pepper to taste

For the chicken drumsticks: 

12 chicken drumsticks

2 tbsp paprika, smoked

2 tsp ground black pepper

4 tsp brown sugar

2 tsp salt

1 tsp celery salt

2 tsp chilli powder

3 tsp garlic powder

2 tsp dry English mustard

2 tsp ground cumin

Method

1. Place the beans, black eyed peas, tomatoes, jalapeno, corn, avocado, red pepper, onion and coriander in a large bowl. 

2. In a small bowl, whisk together the olive oil, lime juice, honey, chilli powder, cumin and salt and pepper.

3. Pour the dressing over the bean mixture and toss gently to coat, leave to marinate for 20 minutes.

4. Place the drumsticks on to the chopping board.

5. With a sharp knife, chop the knuckle off  keeping a nice clean bone.

6. Place in a bowl and dust with the rub mixture..

7. Heat a large frying pan, then add a little vegetable oil.

8. Add the drumsticks and gently brown, then cover with a tight fitting lid and then turn then heat right down and gently cook for 20 minutes until cooked so the meat will come away from the bone easily, may take a little longer but don’t rush it, it's worth the wait.

9. Once cooked, serve with the salad and tortillas.

Phil's Tip

Phil suggests using cauliflower florets in place of the chicken drumsticks. Simply coat in oil and then the spice mix, and follow the same method for cooking as the chicken recipe, but reduce the cooking time to 15 minutes.
