Nisha Katona's beef madras

It’s every curry lover's dream, rich and flavourful and definitely melt-in-the-mouth. Nisha's taking the stress out of midweek eating with her deliciously soft, slow-cooked beef madras. It's sure to be a hit for those cold autumn nights.

Nisha Katona’s Slow Cooker Beef Madras

Serves: 4

Ingredients

80ml vegetable oil 2 large white onions, medium diced750g diced beef shin or stewing beef (cubes approx. 2.5cm or larger)5cm ginger, peeled and grated 5 garlic cloves, peeled and grated2 tbsp garam masala2 flat tsp ground cumin 3 star anise, whole 2 heaped tbsp sweet (not smoked) paprika1 tsp ground turmeric ½ tsp chilli powder½ 400g tin chopped tomatoes1 tbsp tamarind concentrate350ml water2 tsp salt1 tsp brown sugar

For garnish:Handful chopped coriander 2 tbsp pomegranate seeds Basmati rice or roti breads 


Method

1. Put the vegetable oil in a large, heavy-based saucepan and set over a medium high heat. When hot, add the diced onion, ginger and garlic, and cook for 8 minutes until they are golden brown. 

2. Add the diced beef and fry until it starts to brown, stirring well. 

3. Stir in the garam masala, cumin, star anise, paprika powder, turmeric and chilli powder and fry for 30 seconds. 

4. Transfer the beef, onions and spices to the slow cooker, and stir in the chopped tomatoes, tamarind, water, salt and sugar. Cover and cook on high in the slow cooker for 4-5 hours, until the beef is tender and giving. 

5. Add more water to loosen to your taste before serving. Garnish with chopped coriander, pomegranate seeds and serve with white basmati rice or roti breads.
