Nisha Katona 10-minute lamb kebabs

Late-night lamb kebabs
Serves: 4
Ingredients
For the lamb kebabs:
500g ground lamb
1 large green chilli, finely chopped
1 onion, finely chopped
Juice of 1 lemon
1 clove garlic, crushed
½ tsp salt
2 tbsp ground cumin
Small handful fresh coriander, leaves finely chopped
1 red onion, halved and finely sliced
Tortilla wraps, to serve
For the mint yoghurt:
100ml Greek yoghurt
2 tbsp mint jelly
Method
1. Preheat the grill/ broiler to high and line a grill pan with foil.
2. Put the lamb, chopped chilli, onion, lemon juice, garlic, salt, ground cumin and 2 tbsp of the fresh coriander in a large bowl and use your hands to mix until everything is really well combined.
3. Divide the mixture into 8 equal-sized balls, then form each ball into a sausage shape, each around 6cm long.
4. Lay the lamb kofta on the prepared grill pan and grill/ broil for 6-8 minutes, turning regularly, until golden and cooked through.
5. While the kofta are cooking, put the yoghurt and mint jelly in a bowl and stir to combine.
6. Once cooked, serve the kofta in a wrap along with the mint yoghurt, sliced red onion and sprinkle with coriander. Or place in the middle of the table and let everyone assemble their own kebabs.
