Nathan Anthony's chicken, chorizo and jalapeño parcels
King of the air fryer Nathan Anthony is back with another speedy and delicious recipe. His chicken, chorizo & jalapeño parcels (a twist on a classic Spanish empanada) are served alongside his crispy cubed potatoes.
And that's not all! He’ll be making a side of his signature air fryer pitta and guacamole - just the thing when you need a meal on the table fast!
Pitta chips with guacamole
Serves 4
Ingredients
For the pitta chips:6 pitta breads (white or wholemeal)2 tbsp oil1 tsp paprikaSalt and pepper Grated mozzarella for sprinkling (optional)
For the guacamole:1 onion, finely chopped1 red chilli, chopped2 avocados, mashedHandful of fresh coriander, chopped5 garlic cloves, crushed2 handfuls of cherry tomatoes, finely choppedJuice of 1 limeJuice of 1 lemon1 tbsp oilSalt and pepper
Method
1. In a bowl, combine the chicken with all the ingredients apart from the wraps and egg.
2. Add the filling to the middle of the wraps and fold over the sides and ends to make a parcel.
3.Brush with the beaten egg and press down the edges of the wrap with a fork tightly.
4. Air-fry at 180℃ for 9-10 minutes.
Chicken, chorizo & jalapeño parcels
Makes 8
Ingredients
200g cooked chicken, shredded with forks of chopped into chunks100g cooked chorizo3 tbsp tomato puree3 tbsp sriracha1 tsp paprika 3 jalapeños, sliced (ones from a jar work well)1 red pepper, finely diced100g mozzarella, gratedSalt and pepper, to taste8 mini tortilla wraps (large ones work too)1 egg, beaten
Method

Garlic and parmasan crispy cubed potatoes
Serves 4
Ingredients
700g baby potatoes, skin on, chopped into cubes1 tsp paprika1 tbsp oilPinch of salt100g light or half-fat butter4 garlic cloves, crushed or grated20g Parmesan, grated
Method
1. Put the potatoes in a bowl with the paprika, oil and salt and turn to coat them.
2. Air-fry the potatoes at 200℃ for 20 minutes, shaking them three times for an even cook.
3. Melt the butter in a bowl in the microwave along with the garlic - you could do this in a pan also. Mix together the cooked potatoes and garlic butter in a large bowl. Sprinkle with Parmesan and serve.
