Lisa Snowdon's three ingredient healthy pancakes

These 3-ingredient pancakes are a staple in Lisa’s house. Not only are they easy to make using just bananas, eggs and oats, you can dress them up and flavour them however you wish! Perfect for brunch, lunch and everything in between... they will soon become your ‘go-to’ quick and easy meal.

Three ingredient pancakes with pick’n’mix toppings

Serves: 2

Ingredients

For 6 small pancakes: 40 - 45g rolled oats2 eggs1 ripe banana 

For the stewed apple: 3 apples, skin on and cut into slices1 tsp ground cinnamon 

For the maple bacon: 4- 6 slices streaky baconMaple syrup, to glaze (alternatively honey or agave syrup)

Toppings: Flax seeds, sunflower seeds, pumpkin seeds, crushed almonds (skin on)BlueberriesNatural yoghurt Raspberries Chocolate hazelnut spread


Method

To make the banana pancakes: 

1. Blitz the oats in a food processor to make a flour, then add the banana and eggs (you can also add 1 tsp vanilla extract and a pinch of cinnamon if you like) and blitz again until you have reached a smooth batter consistency. 

2. Heat a little oil in a large frying pan, add 6 large spoonfuls of the batter mixture and cook for 2-3 minutes, or until the base is set and golden and small bubbles appear in the top surface, then flip over and cook for a ≈,further 2-3 minutes. Serve with your choice of toppings.

To make the stewed apple: 

1. Place the sliced apple into a pan, add 4 tablespoons of water and the cinnamon and bring to a simmer, then place a lid on the pan and cook gently for about 10 minutes, or until the apples have softened.  

To make the maple bacon: 

1. Cook the bacon in a frying pan, once cooked, brush each rasher with the maple syrup and cook for a further minute until golden and crispy.
