Juliet Sear's super speedy no-bake mother’s day cake
If you're wanting to impress someone this Mother’s Day with a delicious show stopping cake, but you’re strapped for time - Juliet has the ultimate hack. Her last-minute no-bake Swiss roll cake is perfect for any big occasion and it doesn’t require turning on the oven!
Juliet’s no bake mother day cake
Serves: 8-10
Ingredients
Food colouring of your choice
750g shop bought buttercream (or home made with 250g very soft unsalted butter mixed with 500g sifted icing sugar and 1 tsp vanilla extract or bean paste)
2 shop bought Swiss roll cakes
For the centre:
Maltesers / mini sweets / sugarpaste / sprinkles
Method
1. Mix the food colouring into the buttercream.
2. Cut each cake into equal thirds, giving you 6 discs of sponge.
3. Assemble the discs onto a cake plate, drum or cake stand, in a circle, sticking each down with a dab of buttercream.
4. Use a little of the buttercream to crumb coat the cake pieces then chill in the fridge or freezer to set.
5. Use the remaining icing to give the flower cake a second coating, creating the petal effect with a palette knife or regular butter knife.
6. To make the centre, fill the hole inside with Maltesers or other sweets. Alternatively you can fill the centre with a ball of sugar paste, then top with sprinkles.
