Juliet Sear’s Spooky Cookies
Makes 15 cookies
Ingredients
150g unsalted butter, softened100g golden caster1 medium egg1 tsp vanilla 250g plain flour Pinch of fine sea salt3 tbsp hazelnut spread
Method
1. Preheat the oven to 170c and line two baking trays with baking paper.
2. Put the butter and sugar in a bowl and beat until pale and fluffy. Add the egg and vanilla and beat again until combined.
3. Tip in the flour and pinch of sea salt and beat until it forms a soft dough.
4. Divide the mixture into about 30g balls. Use wet hands while rolling into balls to prevent sticking and pop them onto the lined trays, leaving room between each of them. Flatten each ball slightly.5. Use the end of a wooden spoon and push into each dough ball to make two holes for the eyes.
6. Bake for about 6-7 minutes, remove and push the spoon back into the eyes to make sure the wells don’t puff up. Bake for a further 7-9 minutes until golden. Leave on the tray to cool.
7. Slightly warm the hazelnut spread in the microwave and place into a small piping bag. Then cut a very small hole in the end of it. Fill the eyes and pipe a wiggly line for the mouth.
