As Sam Thompson takes on the Paddington Bear experience, Juliet Sear has snuck into the Brown’s house this morning, to make her world famous Marmalade Sandwich Cake.
Juliet Sear's marmalade sandwich cake
Makes 1 loaf, or 6 sandwiches
Ingredients
For the loaf: 225g white caster sugar 225g unsalted butter, softened 4 large eggs250g self-raising flour, mixed with ½ tsp baking powder and large pinch of salt Zest of 1 lemon and 1 orange
For the buttercream: 100g unsalted butter, softened 200g icing sugar 1 tsp vanilla extract
To serve:Good-quality marmalade
Method
1. Preheat the oven to 150C Fan/Gas mark 3. Line a 2lb loaf tin.
2. To make the batter, beat together the sugar and butter until pale and creamy. Stir in the lemon and orange zest. Add the eggs and mix to combine.
3. Stir in the flour mix, and beat until there are no lumps. Pour the batter into the lined loaf tin and bake for 50-55 minutes.
4. Remove the tin from the oven, and leave to cool for 10 minutes in the tin, before turning out onto a wire rack to cool fully.
5. While the cake cools, beat together the butter, icing sugar and vanilla to make the butter cream.
6. Thinly cut the loaf into 12 slices, to make 6 sandwiches. To construct each sandwich, spread 45g of butter cream on the first slice, then add 2 heaped tsp of the marmalade. Place the second slice on top to create the sandwich, and repeat.
