John Torode’s perfect pork chop
'I’m sorry that a lot of young people don't know what a good pork chop is like' declared national treasure and British cookbook pioneer Delia Smith in an interview yesterday. It seems the woman who helps Brits learn their way around the kitchen has big concerns about the younger generation. But never fear Delia, John Torode is here to inspire the nation to choose chops with a recipe that can’t fail.
John Torode’s Perfect Pork Chop
Serves 4
Ingredients
50ml vegetable oil
2 tsp sea salt flakes
4 large pork chops, bone in
20g butter
50ml white wine
1 tbsp capers
1 tbsp chopped fresh parsley
Squeeze of lemon juice
To serve:
Mustard
Chips
watercress
Method
1. Take the pork chops and score the skin with a sharp knife.
2. Rub with the vegetable oil and salt well, then season with freshly ground black pepper.
3. Heat a pan, add a little more oil then cook the pork chops until browned, this will take a couple of minutes each side. Cook for another few minutes on each side until firm, then add the butter to the pan and cook for another minute basting as the butter melts. Take the chop from the pan and leave to one side.
4. Keep all of the juices in the pan add the wine, bring it to the boil and then add the capers, parsley and lemon juice.
5. Serve the chops with the caper and lemon sauce.
