John Torode's perfect Aussie breakfast
How do you like your eggs in the morning? Well, once you see John Torode’s perfectly poached eggs, this will be the only way.
To go alongside his punchy breakfast, John’s adding in some avocado toast and lime tabasco.
Perfect Aussie breakfast
Serves 4
Ingredients
1 sourdough loaf
2 litres of water
2 tablespoons of white wine vinegar
2 eggs
Soft butter
A ripe avocado
Tabasco
Lime
Chilli flakes
Worcestershire sauce
Salt & pepper
Method
1. Slice your sourdough to your preferred thickness.
2. Put the vinegar and 2 litres of water in a deep pan and bring to a rolling boil.
3. Break the eggs into the pan at the top of the pan. You need to keep the water at a rolling boil as you add the eggs so keep turning up the heat as necessary. Once the eggs float to the surface, cook for a further two minutes.
4. Toast your sourdough and butter liberally.
5. Cut and scoop your avocado and mash with lime and tabasco, chilli flakes, Worcestershire sauce, salt and pepper to taste.
6. Loosely spread the avocado on the toast, remove the egg from the pan, drain well and place on top of the avocado.
7. Sprinkle liberally with chilli flakes if desired.
