Joe Wicks' spicy sausage spaghetti
Best-selling author and fitness guru Joe Wicks is back in the kitchen with his twelfth cookbook ‘Feel Good in 15’. He'll be bringing us his spicy sausage spaghetti. It’s tasty, it’s speedy, and with only a handful of ingredients it’s the perfect, guilt-free family meal.
Spicy sausage spaghetti
Serves: 4
Ingredients
350g spaghetti or bucatini pasta 150g pancetta cubes 4 tbsp ‘nduja (spicy sausage) paste 4 eggs yolks, plus 2 eggs 75g Parmesan, finely grated, plus extra to serve Salt and freshly ground black pepper
Method
1. Bring a large pot of water to the boil, and salt generously. Boil the pasta for 9-10 minutes, until al dente.
2. Meanwhile, fry the pancetta in a large, dry frying pan over a low heat until crispy and the fat has rendered nicely.
3. Add the ‘nduja paste, stir for 1 minute until fragrant, then turn off the heat.
4. Mix the egg yolks, whole eggs and grated Parmesan in a large bowl and season with lots of black pepper.
5. Once the pasta is cooked, transfer it directly to the pan with the pancetta and ‘nduja. Turn the heat to low and mix well to combine.
6. Turn off the heat again, and pour in the egg and cheese mixture. Toss well off the heat until the sauce is glossy and clings to the pasta - you may need to use a splash of pasta water to help reach the desired consistency.
7. Serve with extra grated Parmesan.
