James Martin's zesty biscotti
James is continuing his ‘get ahead for Christmas’ ideas and making his delicious zesty biscotti - perfect with a coffee and a great Christmas gift for friends and family.
Biscotti
Makes: 30 - 40
Ingredients
250g plain flour
250g caster sugar
2 tsp baking powder
3 medium eggs
50g dried apricots, chopped
50g dried cranberries, chopped
50g dried blueberries, chopped
75g pistachios
50g blanched almonds
50g shelled hazelnuts
Zest and juice of 1 lemon
Method
1. Preheat the oven to 180c/gas 4
2. Mix all of the ingredients together by hand in a large bowl, and form into two sausage shapes. Place both of the sausages onto a lined baking tray, leaving a big gap between them in the middle, and bake for 20 minutes.
3. Drop the oven temperature down to 120c and remove from the oven
4. Using a bread knife, cut into thin slices to make the biscotti, and pop back onto a lined baking tray and cook for a further 10 to 15 minutes
