James Martin's celebratory cheese fondue
Made with two different cheeses, fondue is the ultimate celebration food for Christmas! James serves up his cheesy feast with Christmas nibbles.
Celebratory cheese fondue
Serves: 6
Ingredients
For the fondue
100ml white wine
3 tsp cornflour
500g grated cheddar cheese
500g grated gruyere cheese
100ml crème fraîche
Salt and pepper
To serve
18 baby carrots, roasted with equal quantities butter, sugar and 5 star anise.
200g baby radish
400g baby potatoes, blanched and wrapped in pancetta then roasted
300g Chicken strips
400g bread chunks wrapped in pancetta strips and roasted
1 jar cornichons, drained
Method
1. To make the fondue, whisk the creme fraiche, wine, cornflour and cheese together in a non stick pan, warming through gently whisking continuously
2. Pour into a fondue dish and keep warm
3. To serve the fondue transfer into individual serving dishes for each person, alongside a selection of roasted carrots, radish, baby potatoes, chicken stips, bread wrapped in pancetta and cornichons for dipping
