James Martin's BBQ mix grill with chimichurri and roasted veg
It's a day we've all been looking forward to. We are legally allowed to mix with friends and family in our gardens, so this of course means it's BBQ time! So to help make sure we don’t cremate our dinner, James shows us how to make a whole meal on the BBQ. First up, he’s starting with his chimichurri mixed grill with wood roasted veg.
BBQ mix grill with chimichurri and roasted veg
Serves: 2-4
Ingredients
500g sirloin steak2 large pork chop2 toulouse sausages2 pork sausages4 lamb chops2 lamb kidneys50ml olive oilSalt and pepper
Vegetables
2 Roscoff onions cooked in beer for 30 minutes4 baby aubergines2 courgettes1 red pepper, cored and sliced1 green pepper, cored and sliced1 bunch asparagus
100ml olive oilSalt and pepper
Sauce
1 bunch coriander, chopped1 shallot, peeled and diced2 cloves garlic, peeled and diced1 green chilli, diced2 tbsp vinegar4 tbsp olive oilSalt and pepper
Method
1. Heat a BBQ until hot and the coals are white
2. Oil the meats and cook for 3 minutes on each side until charred, then rest and season
3. Oil the vegetables and char/cook on the BBQ. Set aside.
4. To make the chimichurri, simply mix all the ingredients together in a medium sized bowl
5. To serve, pile the selection of meats and vegetables onto a platter and spoon over the sauce
