Gok's speedy chicken satay salad

Gok is in the kitchen today cooking his delicious chicken satay salad with punchy peanut sauce.
It may look 5 star, but it comes in at just £1.40 a head. The perfect dish to impress for less.
Easy satay chicken salad with griddled baby gem lettuce
Serves 4
Ingredients
2 chicken breasts, bashed flat
1 tbsp light soy
1 tsp mild curry powder
¼ tsp cumin powder
1½ cloves minced garlic
2 tsp clear honey
Oil, to fry
4 x baby gem lettuce, halved
2 tbsp crunchy peanut butter
1 tsp oyster sauce
1 tbsp lime juice
1 tbsp sweet chilli sauce
2 tbsp hot water, to loosen
2 shallots, thinly sliced and pickled in rice wine vinegar and sugar
¼ cucumber, sliced into half moons
2 tbsp pomegranate seeds
finely chopped coriander
2 spring onions cut diagonally
Salt and pepper
Method
1. Marinate the bashed chicken in soy, curry powder, cumin, garlic and honey. Leave in the fridge for 2 hours, or overnight if you have time.
2. Heat a little oil in a large frying pan. Add the chicken and season with salt and pepper then cook for about 4 - 5 minutes on each side, or until cooked through. Leave to one side to rest when cooked.
3. Toss the halved lettuce in a little oil then griddle until charred.
4. Mix together the peanut butter, oyster sauce, lime juice and chilli sauce, then add a little water to loosen.
5. Arrange the lettuce on a platter. Top with the sliced chicken then drizzle over the satay sauce. Garnish with shallots, cucumber, pomegranate seeds, coriander and spring onions.
