Gok's health and happiness noodles
Gok’s back to continue the Chinese New Year celebrations, with his classic noodles to bring you luck and prosperity for the year to come!
Health and happiness noodles
Serves 4
Ingredients
340g dry Yi Mein noodles
1 tablespoon of Groundnut oil, to fry
2 cloves garlic, minced
2.5cm ginger, minced
5 shiitake mushrooms, sliced
100g morning glory / Chinese broccoli, cut into 5cm lengths
100g Chinese chives, cut into 5cm lengths
100g asparagus, cut into 5cm lengths
100g green beans, cut into 5cm lengths
2 spring onions, cut into 5cm lengths
1 tbsp hot water
2 tsp light soy
1 tsp dark soy
2 tbsp vegetarian oyster sauce
½ tsp sesame oil
2 tsp runny honey
¼ tsp sugar
¼ tsp salt
Freshly ground white pepper
Toasted sesame seeds to sprinkle
50g pea shoots
Method
1. Blanch the noodles in boiling water for 2 mins no longer. Once cooked, drain and put in a bowl of cold water to prevent sticking.
2. Heat a little groundnut oil in a wok and add the vegetables and cook for 3 minutes
3. Add the garlic and ginger
4. Return the noodles to the pan and mix through, then add the hot water, light soy, dark soy, vegetarian oyster sauce, sesame oil and honey. Heat through and then season with salt, pepper and sugar.
5. Finish with sesame oil and seeds and serve with pea shoots on top.
