Gok cooks up Poppa Wan's paper bag chicken

Yesterday we saw Gok in Hong Kong with his dad cooking Poppa Wan’s world-famous paper bag chicken. It looked so good that we’ve asked Gok to cook it for us live this morning!

Serves: 4

Ingredients

4/5 cloves of garlic2 thumbnail size pieces of ginger, peeled Handful spring onions3 star anise1 cinnamon stick 1 tsp Chinese five spice1 tablespoon soy sauce1 tablespoon fish sauceChicken – thighs and legs will work best for thisOil for deep frying

Method

Chop some garlic, ginger, spring onions and place into a bowl

Add the star anise, a cinnamon stick and a sprinkle of five spice

Mix with some soy sauce and a dash of fish sauce. Mix it all together.

Add the chicken and leave to marinade overnight

Place the chicken inside greaseproof paper bags tie the tops and then deep fry until cooked

Serve the chicken and be careful – it will be extremely hot
