Donal Skehan’s tasty cottage cheese recipes

The 1970s staple is wowing a new generation, with supermarkets reporting a boom in sales of Cottage Cheese - with TikTok recipes clocking up more than 450 million views. But, if you need convincing, Donal’s here with three healthy, tasty recipes that won’t leave you feeling cheesed-off.

Scandi salmon sandwiches

Serves: 4

Ingredients

½ red onion, sliced1 tbsp lemon juicePinch of sugarPinch of salt200g cottage cheeseSqueeze of lemon1 clove of garlic, minced4 slices rye bread, toasted4 pieces of smoked salmon4 tsp capersHandful of fresh dill, choppedFreshly cracked pepper, to taste

Method

1. Place the sliced red onion in a bowl with the lemon juice, sugar and salt. Mix and leave to one side for 10 minutes.

2. Whip the cottage cheese in a food processor with the lemon and garlic until smooth.

3. Top the toasted slices of rye bread with a few spoons of the whipped cottage cheese. 

4. Place the slices of smoked salmon on top, followed by the capers, pickled red onion and chopped dill.

5. Season with black pepper and serve.


Fluffy pancakes

Serves: 2

Ingredients

125g rolled oats150g cottage cheese75 - 100ml milk2 large eggs1 tsp baking powder¼ tsp salt½ tsp cinnamon2 tbsp sunflower oil250g  blueberriesMaple syrup or honey, to serve

Method

1. Blitz the oats in a food processor until fine, tip into a large bowl along with the milk, eggs, baking powder, salt and cinnamon and mix until combined.

2. Heat half the oil in a large frying pan, add a large spoonful of the batter to give you three pancakes. Pop in a few blueberries on the uncooked side and press them in gently, allow to cook for 3-4 minutes or until little bubbles start to appear and the edges become a little dry and then turn over to cook for about a minute until golden brown. Set these aside and repeat with the remaining tablespoon of oil and batter to give you 6- 8 pancakes in total.

3. Serve drizzled with  honey and toss through.


Creamy whipped dip

Serves: 4

Ingredients

300g cottage cheese1 garlic clove, crushedSqueeze of lemon juice75 g semi-dried (sun blushed) tomatoes, choppedVegetable crudites

Method

1. Place the cottage cheese into a blender, add the lemon juice and garlic and blend until airy and smooth.

2. Spoon the cheese mixture into a bowl and serve with the vegetables.
