Cook in minutes with Alison’s microwave masterclass

Fresh from the revelation that Eamonn cooks his bacon in the microwave, Alison Hammond has come out in full support. Today Alison is beaming live from her home to show us her foolproof microwave method for crispy bacon, and her favourite microwave recipes!

Chocolate microwave mug cake

Ingredients

2 tbsp cocoa powder

3 tbsp light brown sugar

4 tbsp self raising flour

3 tbsp vegetable oil

3 tbsp milk

1 medium egg

For the filling

Chocolate truffle or 1 tbsp peanut butter

Chocolate sprinkles, to decorate, optional

Method

  • Mix the cocoa, sugar and flour together in a 400ml microwave safe mug

  • Add the oil, milk and egg and mix well, getting the spoon right into the corners of the mug so all the dry ingredients are incorporated

  • Place the mug into the microwave and cook on High (1000W) for 50 seconds

  • Carefully take the mug out of the microwave (it will be hot, so use a cloth or oven gloves). Using a teaspoon, push the chocolate truffle (or the peanut butter) into the centre of the mixture.

  • Place the mug back in the microwave and cook on High for a further 50 seconds, or until the sponge is firm and risen

  • Leave to stand for 1 minute before carefully taking out of the microwave

NOTE: adjust the cooking times accordingly for microwaves of different wattages / power.
