Oven baked eggs in a dish with ham and melting, bubbling cheese is the perfect recipe to combat those Monday blues!
Baked eggs with ham and gruyère
Serves: 2
Ingredients
25g butter
4 eggs
75g, cooked ham, shredded
50g Gruyere cheese, grated
1 tsp Dijon mustard
¼ tsp grated fresh nutmeg
½ tsp thyme leaves
2 tablespoons cream
Sea salt and freshly ground black pepper
To serve
Bread, toasted

Method
1. Preheat the oven to 180C/Gas Mark 4 (fan oven)
2. Grease 2 small ovenproof dishes with the butter and crack 2 eggs into each one
3. Divide the shredded ham between the two dishes
4. Place the cheese in a bowl and whisk together with the mustard, nutmeg, thyme and cream. Season with salt and pepper. Scoop the cheese mixture on top of the eggs.
5. Place the dishes on a baking tray and into the pre-heated oven for 10 minutes
6. Serve with toasted bread cut into thin slices so that you can dip them into the eggs
