Clodagh McKenna's ultimate one-pan fry-up

One-Pan Fry-Up!
Serves: 2
Ingredients
1 tbsp vegetable oil 50g butter4 breakfast pork sausages White pudding and black pudding 200g chestnut mushrooms, sliced2 tomatoes, halved8 unsmoked streaky bacon2 eggs½ tin baked beansHandful flat-leaf parsley, roughly chopped Sea salt and freshly ground black pepper Bread or toast and butter, to serve
Method
1. Place a frying pan over a medium heat and pour in the vegetable oil. Add the sausages and black or white pudding and fry for 5 minutes, turning occasionally until they are golden brown. Push them to the side of the pan.
2. Add the sliced mushrooms and tomatoes, cut-side down first. Stir the mushrooms around so they get golden in colour, and turn the tomatoes after a minute. Push the mushrooms and tomatoes to the side to make room for the rest of the ingredients.
3. Add the butter to the pan. Once melted, add the bacon and crack two eggs into the pan. Season the eggs, tomatoes and mushrooms with salt and pepper. Cook for two minutes then spoon the baked beans into the pan where there is space. Pop a lid over the frying pan and turn down the heat to low. Cook for 5 minutes.
4. When the eggs are cooked to your liking, spoon the breakfast onto 2 warm plates. Serve with the chopped parsley sprinkled over the top, hot buttered toast, and the homemade hash browns.
