Clodagh McKenna's cheesy baked eggs

Feast like a king with Charles’ all-time favourite comfort food, Cheesy Baked Eggs. A dish of creamy cheese delight packed with salty ham and spices, Clodagh’s brunch dish is a culinary feast for the senses.

Charlie's cheesy eggs

Preparation time: 10 minutesCooking time: 10 minutes

Serves: 2

Ingredients

25g butter

4 eggs 

75g cooked ham, shredded

60g Montgomery cheese or similar, grated

1tsp Dijon mustard 

¼ tsp grated fresh nutmeg

½ tsp thyme leaves

2 tablespoons cream 

Sea salt and freshly ground black pepper 


Method

1. Preheat the oven to 180℃ fan/Gas Mark 4

2. Grease 2 small ovenproof dishes with the butter. Crack 2 eggs into each dish. 

3. Divide the shredded ham between the two dishes. 

4. Place the grated cheese in a bowl and whisk together with the mustard, nutmeg, thyme and cream. Season with salt and pepper. 

5. Scoop the cheese mixture on top of the eggs. 

6. Place the dishes on a baking tray and bake in the preheated oven for 10 minutes. 

7. Serve with toasted bread, cut into thin slices for dipping into the baked eggs.
