Claire Sisk's chicken and tomato pasta
To mark Global Accessibility Awareness Day, blind content creator and disability activist Claire Sisk is in the kitchen cooking up her chicken and tomato pasta. As well as revealing how new technology can help people with visual impairments in the kitchen.
Claire Sisk’s Chicken and Tomato Penne

Ingredients
140g penne pasta2 tbsp olive oil2 chicken breast fillets, chopped1 large onion, chopped1 clove garlic, chopped400g tin chopped tomatoesHalf a vegetable stock cubeAbout 1 tbsp tomato pureeSalt and freshly ground black pepper Fresh basil, shredded, to finish
Method
1. Cook the pasta in a large pan of boiling salted water, according to the packet instructions, then drain.
2. Heat 1 tbsp oil in a frying pan, add the chicken and season, then cook on a medium heat for about 8-10 minutes, turning occasionally, or until the chicken is cooked through.
3. Heat the remaining oil in another pan, add the onion and cook gently for about 10 minutes, or until the onions are softened and light golden brown.
4. Add the garlic, tomatoes, stock cube and tomato puree to the onions and mix well, then simmer for 5 minutes.
5. Add the chicken and drained pasta and mix together then heat through for another 2 minutes.
6. Stir through some shredded basil leaves and serve immediately.
