Beef chilli and spicy meatballs

Why cook one dinner, when you can cook tonight's and tomorrow's at the same time using similar ingredients?

Phil Vickery's helping viewers make the most of their food shop by making two easy meal ideas from one main ingredient, as he cooks up beef chilli and spicy meatballs.

Beef chilli

Serves: 4-6

Ingredients

1 tbsp vegetable oil4 large onions, peeled and finely chopped4 cloves garlic, peeled and chopped500g beef mince, best with a 20% fat content3 tsp cumin2 tsp ground cinnamon2 tbsp paprika, optional2 tbsp dried oregano2 tsp dried chilli flakes400g can chopped tomatoes in juice400mls water, roughly4 tbsp tomato puree2 tbsp sugarSalt & pepper1 x 400g cooked black eyed peas, drained

Guacamole, sour cream and soft wheat tortillas to serve

Method

  • Heat the oil and add the onions and garlic and soften. Add the mince and break up well with a wooden spoon. Then cook until all the moisture has evaporated and the meat is starting to brown nicely.

  • Next add the spices, herbs, tomatoes, water, puree and sugar. Mix well and taste, adjust the seasoning if needed.

  • Finally add the drained beans and cook for 30-40 minutes, gently. Serve with guacamole, sour cream and soft tortillas.

Spicy meatballs

Serves: 4

Ingredients

500g mince1 small onion, peeled and finely chopped1 egg white2 cloves garlic, peeled and crushed2 tsp dried thyme1 tbsp tomato puree2 tbsp honey2 tbsp Worcester sauce2 tbsp unsalted buttersalt and black pepper100g spinach2 tbsp Worcester sauce

For the rice

2 tbsp olive oil1 small onion, finely chopped200g long grain rice400mls boiling water (or double the volume of water to rice)2 x 5g stock cubes1 tbsp olive oilSalt and pepper

Method

  • Place the mince, onion, egg white, garlic, thyme, tomato puree, honey and Worcester sauce into a bowl and mix well. Form into about 16 small balls.

  • Heat the butter in a frying pan and add the balls, cook on all sides for about 10 minutes. They will be nice browned. When cooked remove from the pan and add the spinach and second lot of Worcester sauce. Cook until the spinach is wilted, then add the meatballs back and coat well.

  • For the rice, preheat the oven to 200C gas 6. Heat 2 tbsp of oil and add the onion, cook for 2 minutes. Add the rice and coat well in the oil and onions.

  • Add the boiling water and sprinkle in the stock cubes and stir through. Bring back to the boil and place the lid on and put into the oven for 14 minutes.

  • Once cooked stir well and add the oil or butter, season again and leave for 5 minutes covered

  • Serve the meatballs with the braised rice
