Becky Excell’s air fried fish fingers
Becky Excell is back in the kitchen, with the ultimate family crowd pleaser - super-crunchy fish fingers, but with a gluten-free twist… she’s using cornflakes as the crust! And better yet, they can be cooked in the air fryer.
Cornflake crusted cod goujons with tartare sauce
Serves: 2-3
Ingredients
For the goujons:5 tbsp cornflour 1 tsp salt ½ tsp white or black pepper 2 medium eggs140g gluten-free cornflakes 2 skinless cod fillets (not too chunky)Oil in a spray bottle, for frying
For the tartare sauce: 200g mayonnaise 1 tsp dried parsley Zest of ½ lemon2 tbsp chopped capers2 tbsp chopped gherkins1 tsp garlic-infused olive oil
To serve: Mushy peas Chips (recipe below)
Method
1. If possible, preheat the air fryer to 200C.
2. To make the goujons, mix the cornflour, salt and pepper together and spread out on a large dinner plate. Beat the eggs in a medium bowl. Tip the cornflakes into a large bowl and use both hands to crush them for 30 seconds - make sure there are no whole cornflakes left, or they won’t stick to the fish.
3. Slice the cod fillets into strips (2.5cm wide, 10cm long). Dredge the fish in the cornflour until evenly dusted on all sides, then dip them into the egg until well coated. Dredge the fish in the cornflakes, gently compacting the cornflakes onto the fish.
4. Spray a little oil in the air fryer tray. Place as many coated fish strips into the air fryer basket as will fit without touching, then generously spray with oil. Cook for 5-6 minutes, then turn, spray generously with oil once more, and cook for a further 4-5 minutes.
5. To make the tartare sauce, combine all the ingredients together in a bowl and mix well.
6. Serve the goujons with the homemade tartare sauce, mushy peas, and chips.
Air Fryer Chips
Serves: 2-3
Ingredients
2 medium-large potatoes, cut into chips 1cm thick 1-2 tbsp oil, or garlic-infused oil 1 tsp salt½ tsp black pepper 1 tbsp dried rosemary (optional)
Method
1. Preheat the air fryer to 200C.
2. Add all the ingredients to a medium bowl and mix until well coated.
3. Place the chips into the hot air fryer basket and close. Cook for 10 minutes.
4. Turn over the chips and continue to cook for 5 or so minutes, until they are golden.
