April Jackson’s spicy tomato soup
As the temperature drops, April Jackson is turning up the heat! She’s adding some spice to an autumnal staple - the classic tomato soup. Full of flavour but super simple to make, it’s comfort food with a kick for a cold day.
Spicy tomato soup
Serves: 4
Ingredients
For the soup:1kg vine tomatoes 30g garlic1/4 bunch thyme2 Romero peppers2 red onions1/4 scotch bonnet Olive oilPinch of salt400g tin of San Marzano tomatoes 1 tsp soy sauce1/2 tsp Worcestershire sauce1 tsp brown sugar Salt and pepper, to taste
To serve:Crusty bread rubbed with confit garlic, sprinkled with parsley
Method
1. Preheat the oven to 150℃.
2. Place the vine tomatoes, garlic, thyme, Romero peppers, red onions, scotch bonnet in a roasting pan and drizzle generously with olive oil and heavy pinch of salt
3. Roast the tomatoes for 30 minutes covered with foil and then for another 30 minutes uncovered.
4. Place the roasted vegetables in a pot and blend with the canned San Marzano tomatoes, soy sauce, Worcester sauce, brown sugar and salt and pepper to taste.
5. Place the pan back on the heat and let the soup simmer whilst you prepare bread and then serve.
