How to make the perfect Welsh cake
It wouldn't be St David's Day without a traditional Welsh cake. With this in mind we've been hunting around for the best recipe, and we think we've found it:
The perfect Welsh cake
250g Plain flour
1 tsp cinnamon
Pinch of salt
100g Welsh butter, chilled and diced
50g Caster sugar
60g Golden raisins
1 egg
4 - 5 tbs milk

Sift together the flour, baking powder, cinnamon and salt.
Add the butter and rub in with your fingers until the mixture resembles fine breadcrumbs.
Add the sugar and golden raisins.
Add the egg and sufficient milk to bind the mixture together.
Place on a board and roll out to about 1/2-1cm. Using a 6cm pastry cutter, cut into round shapes, you should get approximately 20.
Heat a heavy based frying pan or flat griddle pan and lightly grease. Cook the cakes for about 3-4 minutes on a gentle heat.
When golden brown on both side toss into a bowl of cinnamon or vanilla sugar
