Flippin' tasty! How to cook the perfect Welsh pancake

It's Shrove Tuesday, and there's no better excuse to whip out your frying pans and tuck into a delicious plate of pancakes.

But have you ever considered making a Welsh pancake, better known as a Crempog or 'ffroes'? They're thicker than traditional British crepes, and are traditionally eaten in a stack, covered with melted butter.

This recipe will show you how:

  • 500g plain flour

  • 100g butter

  • 500ml buttermilk

  • 2 eggs

  • 130g sugar

  • 2 tsp bicarbonate of soda

Gently warm the buttermilk over a low heat, then remove from the heat and stir in the butter until it melts. Gradually add the flour, mixing thoroughly.

Leave this to stand for around 20 minutes. Then, in a separate bowl, beat the eggs and combine with the sugar and bicarbonate of soda.

Pour this mixture in with the flour and buttermilk and mix well until you have a smooth batter.

Put a little oil into a pan and turn up the heat. Drop one spoonful of batter onto the pan each time and cook until lightly golden on either side.
