Classic pancakes
To make approximately 12 traditional pancakes, you will need the following ingredients:
100g plain flour
2 large eggs
300ml milk
Butter or oil for frying
Lemon and sugar to serve
Method:
Sieve the flour and add the eggs and milk into a large bowl
Whisk into a smooth batter
Heat a frying pan and add a small amount of butter or oil
Add a spoonful of batter into the pan and cook for approximately one minute before turning over, cooking for a further minute or until golden brown
Serve with a lemon wedge and sugar or an alternative topping of your choice
Savoury pancakes
Do you want something a little less sweet this Shrove Tuesday? Simply follow the classic recipe above, adding a pinch of salt and pepper into the batter mix.
Then swap sugar and lemon for grated cheese and ham.
Vegan pancakes
To make approximately 10 vegan pancakes, you will need the following ingredients (as recommended by The Buddhist Chef):
450g all-purpose flour
1 tsp baking powder
1 tsp salt
2 tbsp sugar
60ml vegetable oil
750ml soya milk or a non-dairy alternative
0.5 tsp vanilla extract
Method:

Add the milk, vanilla extract and oil and whisk until smooth
Heat a frying pan and add a tbsp of oil
Add a spoonful of batter into the pan and cook for approximately two minutes on either side
