Healthy Holidays: how to make vegetable and fish pie
It can be tricky to find something that children can help cook and also enjoy eating.
As part of our Healthy Holidays campaign, here's a bit of inspiration from Rebecca Frankenberg, who works at the Little School of Improbable Cooking in Stoke-on-Trent, teaching children about healthy eating.
Fish Pie:
Make mashed potato by boiling peeled potatoes for 10 minutes, then mashing with milk, butter, and pepper and salt, using a fork.
Boil any fresh vegetables - sweetcorn, kale, carrots, even sprouts, or use frozen vegetables.
You can also add croutons or seeds for texture.
Boil some white fish in water to cook it.
Make a sauce by boiling milk and plain flour together, stirring constantly, and adding either cheese or herbs.
Mix everything together in a pie dish, put the mash on top, sprinkle on some cheese and cook in the oven for about 15 minutes.
Snack time:
1. Vegetable fingersSlice up peppers, cucumber and carrots. Sneak them onto the kids' plates while they're watching TV...
2. Apple smilesSlice up an apple into quarters or a little thiner, cut the middle bit out where the seeds are, and it makes a smiley face.
