Jon Mitchell, Dr Amir and Mama Khan rustle up a delicious curry using Calendar patch veggies

Jon Mitchell joined Dr Amir at his house and had a cooking masterclass with the one and only Mama Khan. They used vegetables grown from the Calendar vegetable patch to make a delicious, authentic vegetarian curry.

The combination of fresh vegetables and spices made a mouth watering dish.

If you would like to recreate this dish here is the recipe for #Mama Khans Mixed Vegetable Curry:

Ingredients:

  • 4 tablespoons of sunflower oil

  • 1 onion sliced

  • 4 tomatoes chopped roughly

  • 1/4 cabbage

  • 3 carrots thinly sliced

  • 3 medium potatoes skin on chopped

  • 1 tablespoon cumin seeds

  • 1/2 teaspoon chilli powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon garlic paste

  • 1 teaspoon ginger paste

  • 1 tablespoon dried fenugreek leaves

  • 100mls water

  • Juice of half a lemon

Method:

  • Heat oil in pan

  • Add the cumin seeds and heat for 1 minute

  • Add the onions and soften but not brown

  • Add the tomatoes, chilli powder, salt and turmeric

  • Stir and heat for 2 mins

  • Add the carrots and water and leave to cook for 4-5 mins until the carrots are soft

  • Add the garlic and ginger and stir

  • Next add the cabbage and potatoes and stir

  • Add the fenugreek leaves and the juice of half a lemon stir and leave to cook for 15 mins

Serve with rice or chapatti
