In April 2019, John McCartney, 40, left the officer with his organs exposed after he was stabbed in front of his family.
The officer, who cannot be named for legal reasons, was stabbed eleven times in the arm, armpit, chin, shoulder, chest, abdomen and stomach.
The officer was helped by his wife and neighbours who helped restrain McCartney and treated his injuries until police and paramedics arrived.
The Essex police officer was taken to hospital in a critical condition and is now recovering at home.
McCartney, of Eastwood Road, Rayleigh appeared at Basildon Crown, where he pleaded guilty to charges of attempted murder and possessing an offensive weapon.
He's due to be sentenced at Basildon Crown Court on March 6.
