Eat Shop Save - Healthy Fry Up

Ingredients (Serves Two)

  • 4 eggs

  • A bag of spinach

  • A packet of tomatoes on the vine

  • 4 portobello mushrooms

  • 2 high pork content sausages (look on the label - you should be aiming for 97% pork)

  • 1 tbsp of olive oil

  • Salt and pepper to taste

Method:

Preheat the oven to 220C/200C fan/gas 7.

Once the oven has reached temperature place your sausages on a baking tray and cook for 20-25 minutes, turning halfway through.

After 5 minutes, add the portobello mushrooms and tomatoes to the baking tray and drizzle with olive oil (no more than 1 tbsp). Salt and pepper to taste and return the tray to the oven.

With 10 minutes left on the oven, crack your eggs into a bowl and whisk until the yolk and the whites are combined.

Boil your kettle.

Add whisked eggs into a pan on medium heat. Wait for the edges to start to cook and then begin to stir with a spatula - this will give a lovely thicker, texture to your scrambled eggs.

Whilst your eggs are cooking, add the spinach to a colander and pour over boiling water in the sink to wilt your spinach.
