Mango and fennel salad

Shelina invites us into her kitchen to show us how she makes her delicious, summery salad with a hint of her favourite fruity flavour.

Ingredients:

1 fennel bulb, trimmed2 large, semi-ripe mangoes1 red chilli, roughly chopped1½ tsp brown sugar Juice of2 limes1 tsp black mustard seeds, toasted3 tbsp freshly chopped coriander Salt and freshly ground black pepper

Method:

  • Slice the fennel into thin strips and place in a salad bowl.

  • Next peel the skin of two mangoes then cut the flesh into thin strips. Add to the bowl with the fennel.

For the dressing

  • Take some brown sugar, add olive oil and the juice limes.

  • Mix everything together before adding mustard seeds, and finally garnish with coriander
