Mango and fennel salad
Shelina invites us into her kitchen to show us how she makes her delicious, summery salad with a hint of her favourite fruity flavour.
Ingredients:
1 fennel bulb, trimmed2 large, semi-ripe mangoes1 red chilli, roughly chopped1½ tsp brown sugar Juice of2 limes1 tsp black mustard seeds, toasted3 tbsp freshly chopped coriander Salt and freshly ground black pepper
Method:
Slice the fennel into thin strips and place in a salad bowl.
Next peel the skin of two mangoes then cut the flesh into thin strips. Add to the bowl with the fennel.
For the dressing
Take some brown sugar, add olive oil and the juice limes.
Mix everything together before adding mustard seeds, and finally garnish with coriander
