Spinach and salmon pasta

Sally This is a quick and easy dish perfect for when you crave the calorie laden cheesy sauces. It’s nice and light yet will satisfy your craving in a much healthier way. Try to use wholewheat pasta – this will fill you up more which means you wont need such a big portion.

Serves 2

Ingredients:100g spinach 150g fresh salmon fillet 1 clove garlic, peel and finely chopped ¼ teaspoon dried chilli flakes 110 g dried wholewheat pasta – any shape! Freshly ground black pepper Juice of half a lemon 100g low-fat creme fraiche 2 tbsp fresh dill, chopped

Method:

  • In a non-stick frying pan heat the olive oil over medium high heat. Add garlic and dried chilli flakes, sauté for 30 seconds. Add salmon fillet and cook for 3 minutes on each side. Take off the heat and set aside.

  • Meanwhile, cook pasta according to package instructions in boiling water, adding the spinach 3 minutes before the end of cooking time. Drain well, return to the saucepan and add lemon juice and low fat crème fraiche. Stir over low heat for 1 minute.

  • Prepare the salmon by removing any skin and bones and cut into bite sized pieces

  • Add to pasta, toss gently and serve, sprinkled with freshly ground black pepper and dill
