Beetroot and spinach superfood salad
Beetroot is jam-packed full of great vitamins and minerals, including Iron, Calcium, Vitamin B6 and Potassium. It helps to fight off infection and is also thought to protect against some cancers. So this salad is a powerful health boost that tastes great. Put together just before serving so that the beetroot doesn’t stain all the other ingredients.
Serves 2
Ingredients:100g fresh baby spinach leaves75g alfalfa sprouts2 celery sticks, sliced4 cooked beetroot, cut into 8 wedges
For the dressing:4 tbsp olive oil1 ½ tbsp garlic wine vinegar1 tsp wholegrain mustard1 garlic clove, crushed2 tsp clear honey1 tbsp snipped fresh chives1 tbsp chopped fresh parsley
Method:
To make the dressing, mix the oil, wine vinegar, wholegrain mustard, garlic, honey and snipped chives and parsley together in a bowl
Put the spinach and alfalfa sprouts and celery in another large bowl and mix together. Now add in the beetroot and mix well
Pour the dressing over the salad, toss well and serve immediately
Sally'sI like to buy fresh beetroot when available from my local farmers market. I chop the stalks off the top and boil for about an hour. Alternatively, you can buy ready cooked beetroot from your supermarket, vacuum packed.
