Warm falafel salad with yoghurt dressing
Former Masterchef winner Shelina Permalloo makes a warm falafel salad with yoghurt dressing.
Ingredients
1 tin chick peas rinsed and drained2 cloves of garlic2tbsp harissa pasteHandful of chopped coriander1-2tbsp plain flourSalt to seasonOil for frying200g Mixed salad leaves
Dressing
4tbsp yoghurt 0 fat1tbsp extra virgin olive oilJuice of 1 lemon1tbsp dried mintSalt and pepperGarnishChopped parsleyPomegranate seeds
Method
Wash chick peas and put into a food processor, add two cloves of garlic
And the star of the show is harisa paste - a middle eastern chili paste - you can get it in any supermarket - this one has a lovely chili hum which is going to liven up the falafel
Add flour and a little bit of salt for seasoning
And we need to pulse this to a fine paste - it’s a beautiful burnt colour because of the harisa and it smells absolutely delicious
Put mix in oil
Carefully take them out of the oil and drain
Yoghurt dressing
Take some yogurt with some dried mint - some salt and finally some lemon juice
Take some green leaves, falafel and the lovely pomegranate which is such a contrast to the chili, the falafel and the lovely cooling yogurt
A few sprigs of parsley and there you have it, my warm falafel salad perfect for those long balmy summer days
