In a rush: Summer sausage, new potato and sourdough bake
Great for busy parents, and guaranteed to satisfy the hungriest members of the family, try this sausage, sweet potato and sourdough bake.
Serves 4
Ingredients8 sausages2 red onions, cut into wedges (leave the root so that they stay together)2 cloves of garlic, smacked and left in skins500g new potatoes, cut in half if bigDrizzle of olive oil200g sourdough bread, roughly torn into 2.5cm pieces150ml chicken stockHandful flat leaf parsley, choppedSalt and pepper
Method1. Heat the oven to 200c.
Part-boil the new potatoes to make sure they are nice and soft.
Put the sausages, onion, garlic and potatoes into a roasting tin and drizzle with a good amount of olive oil.
Season well and roast for 20 -25 minutes.
Give everything a little bit of a turn and drizzle with the chicken stock and add the bread - then return the tray to the oven for a further 10-15 minutes until the sausages are browned, sticky and delicious.
Garnish with chopped parsley.
