Crispy fish goujons with cheats tartare sauce

Craving some delicious pub grub this weekend? These crispy cod goujons with cheats tartare sauce, are a breeze to cook at home, and perfect for a sleepy Sunday afternoon.

Serves 4

Ingredients500g cod fillet (or approx 120g each)Flour for dustingSalt and pepper2 eggs, beaten1 packet Panko breadcrumbsVegetable oil for frying

Method1) Take three shallow bowls and put the flour in one, season the flour with salt and pepper, then the beaten eggs in another and the breadcrumbs in the last.

2) Cut your fish fillets in half lengthways and then dust with the seasoned flour, dip in the egg and then coat with the breadcrumbs.

3) Take a large deep frying pan and pour in the veg oil about 1cm deep and heat over a medium heat until the oil is hot enough. Take a tiny piece of bread and see if it browns in the oil or put a wooden spoon in the oil and if it fizzes its hot enough!

4) Cook the fish for about a couple of minutes on each side then drain on kitchen paper.

Quick tartare sauce

Ingredients½ tub greek yoghurt25g gherkins, chopped10g capers, chopped½ clove garlic, gratedZest and juice of 1 lemonSmall bunch of flat leaf parsley, choppedSalt and pepper

MethodMix all ingredients in a bowl, adding salt and pepper to taste - you may not need much salt as the capers are salty!
