Apple Charlottes served with a Hard Shake

John and Lisa have four terrific home cooked takeaway options in their Weekend Kitchen today.  They start with their Apple Charlottes, which are really simple and budget-friendly baked apple pies. These are served alongside their Hard Chocolate Shakes.

Apple Charlottes served with a Hard Shake

Serves 4

Ingredients

  • 6 mixed seasonal eating apples and Bramley apples (cooking apples)

  • 50g golden caster sugar, plus extra for sprinkling 

  • Juice of half a lemon

  • 100g unsalted butter, plus extra for greasing

  • 1 tbsp of vanilla bean paste (optional)

  • 12 thin slices stale white bread, crusts removed

  • Optional: pinch of ground cinnamon 

  • Vanilla ice cream, to serve

Chocolate Hard Shake

  • 2 large glasses 

  • 4 scoops of chocolate or any ice cream of choice

  • 1 tbsp chocolate drinking powder 

  • 60ml Frangelico, Baileys or Amaretto, or a mix 

  • 200ml milk 

Tip: Try tinned apples as a great alternative to fresh apples.


Method

1. Preheat the oven to 200ºc or 180°c Fan.  Grease the insides of 4 dariole moulds, ramekins or teacups with plenty of butter and a sprinkling of sugar and then set aside. 

2. Peel, core and dice the apples and put into a saucepan with the sugar, lemon juice and cinnamon if using. Bring to the boil then simmer for 5 minutes until the apples are starting to soften. Remove from the heat and set aside to cool.  

3. Melt the butter and vanilla (if using) in a small saucepan. Roll out the slices of bread with a rolling pin so they are nice and flat and cut the slices of bread into triangles, coat each piece in the melted butter and use them to line the dariole moulds, putting the buttered side facing outwards slightly overlapping. Divide the apple filling between the dariole moulds and top by folding over the excess bread triangles. Brush with a little more butter and a final extra sprinkle of sugar. 

4.Put the moulds onto a baking tray and lay a sheet of greaseproof paper on top. Top with a second baking tray and place a heavy lid on top to weigh it down.  This will ensure the Apple Charlottes don’t puff up too much when cooking.   Bake for 25-30 minutes until golden brown. Leave to cool slightly then turn out onto serving plates and top with a dollop of vanilla ice cream. 

Hard Shake

1. Add all of the ingredients to a blender and blend until smooth. 

2. Pour into glasses and serve alongside your warm Apple Charlottes.  Dig in, drink and smile!
