Warm chicken tzatziki
This takes such a short amount of time to prepare. Pop in the fridge to marinate overnight if you can wait to savour the flavours the next day!
(Serves 4)
Ingredients:
1 large carton of Greek yoghurt (250g)A handful of dried mintSea salt to taste4 cloves of garlic, crushed4 chicken breasts with skin off1 tbsp of olive oilA small bunch of of fresh mint, finely chopped (to dress)
Method:
Mix all the ingredients together and marinate overnight (or, for as long as you can, but overnight tastes best!)
Mix well again, place on a roasting tray and bake for 35-40 minutes (until the juices run dry) on180C
Serve with a tomato and onion salad
