Vegetarian stuffed peppers
This colourful veggie dish is fun to make and even more fun to eat!

(Serves 6)
Ingredients:
½ cup olive oil1 teaspoon turmeric1 teaspoon cumin2 medium aubergines finely diced2 courgettes finely chopped1 chopped onion200ml vegetable stock1 can chopped tomatoes3 cloves garlic, chopped100g cooked wild riceSmall bunch of chopped coriander or parsley6 peppers of different colours
Method:
Heat the oil in a large heavy bottomed pan, add the chopped onion and spices, followed by the aubergine and courgettes. Cook for about 10 minutes until the vegetables have wilted.
Stir in the chopped tomatoes, followed by garlic, wild rice and coriander and/or parsley. Mix well.
Remove the pan from heat and allow to cool slightly. Slice the tops off the peppers, keep, then remove the seeds and core from the peppers.
Fill the peppers with the mixture and place the tops back on. Pack the peppers closely together in a baking dish, pour the water around the peppers and pop in an oven heated to 200C. Bake uncovered until the shells are soft for around 40-45 minutes. Can be served hot or chilled.
