Scrambled eggs with courgettes and turmeric
Here's a great idea for jazzing up your usual scrambled eggs without adding any nasties!
(Serves 4)
Ingredients:
2 tbsp olive oil1 tbsp butter½ tsp turmeric2 courgettes, grated5 free range eggs, lightly beatenA pinch of sea salt
Method:
Heat the butter and fry the turmeric for a minute then add the olive oil
Stir in the courgettes and cook for 1-2 minutes
Add the eggs and stir until cooked, but do not over cook! Season.
Eat on its own or on a slice of toasted rye or spelt bread
