Salmon parcels
Tonia shows us how to make simple and healthy salmon parcels, ideal for lunch or dinner. If you don't have salmon you can use another fish such as cod or a chicken fillet.
Ingredients:
4-5 oz piece of salmon or cod or chicken filletClove of garlic, finely slicedSea salt and freshly ground black pepperJuice of half a lemonPinch of parsley or coriander or both½ tsp of turmeric or ½ tsp cumin (optional)
Method:
Place a 4oz, 120g piece of salmon (or whatever you're using) in the middle of a square piece of silver foil and place on top 1 finely sliced clove of garlic a pinch of salt and a pinch of parsley
Add the optional spices if you like a little extra flavour, then follow with a squeeze of lemon
Fold up foil to make a parcel and place in the middle of a 180C oven for 20 minutes
Serve with a large salad or steamed spinach and broccoli
