Greek style pork
As we went all the way to Cyprus to bring you this plan we couldn't compile it without this deliciously traditional Greek dish!
Ingredients:
1kg shoulder of pork, cut into fist size pieces ( ask your butcher at your local supermarket counter or shop to do this for you)500g Cyprus or large potatoes, peeled and quarteredOlive oil, for drizzling2 tsp cumin1 tsp cinnamon3 onions, peeled and sliced lengthways5 tomatoes, (more if in season) sliced lengthwaysSea salt and freshly ground black pepper
Method:
Put the pork and potatoes in a large earthenware dish
Pour a good drizzle of oil in the dish and mix around well. Add the spices and mix again.
Lay the onions and tomatoes over the top and pour over a little more oil and season
Cover with foil and cook in a hot oven (200C) for around 1 hour, then lower the heat to 180C. Remove the foil and cook for a further half hour until browned. Keep an eye on it to ensure it doesn’t burn.
Serve straight from the earthenware dish with Greek rocket
