Greek salad pitta
I love this quick and healthy snack with a drizzle of tahini sauce
Tonia'a Greek salad in pitta bread keeps things light without being boring.
Add Tonia's low sugar sauces or salsa
(Serves 2)
Ingredients:
3 tbsp extra-virgin olive oil 2 tbsp red wine vinegar4 organic tomatoes½ cucumber, diced1 green bell pepper, chopped1 small red onion, chopped2 radishes, chopped¼ bunch fresh flat leaf parsley, chopped 150g feta cheese, crumbled (about 4 1/2 ounces)2 small wholemeal pittas
Method:
Place all the ingredients in a bowl and mix well. Slit the top of the pitta bread and pile in all the salad. Drizzle with tahini sauce as Tonia suggests, or one of her other yogurt sauces or salad - get recipes.
