'You were a bit grungy...' Meet Susanna's mum
On today's show, Susanna will be introducing us to her mum - and apparently she makes a mean apple sauce cake! Will you be bringing some into the studio for us, Susanna?

Sue's applesauce cake
Sue says: This cake keeps well and is best after 1-2 days. With modern ovens, you don’t need to put brown paper around the side of the tin - I started cooking this cake back in about 1978, when ovens were a bit fiercer! It’s nice to add a bit of low fat creme fraiche as well!
Oven 180 C (160 C for fan-assisted) / 350 F / Gas 4 for 50 mins - 1 hour
Ingredients
4oz butter 8oz self-raising flour8oz brown sugar 1/2 tsp ground cinnamon1/2 tsp powdered cloves1/2 tsp grated nutmeg1 egg 6 oz unsweetened, thick applesauce 4oz sultanasPinch of salt
Method
Grease, and line bottom of an 8 inch round cake tin
Light oven fan at 160 C
Beat butter and sugar until smooth
Add egg, and beat well
Add apple sauce and mix
Sift flour and spices and pinch of salt and fold lightly into mixture
Stir in sultanas
Put in greased cake tin
Bake for 50-60 minutes (when cooked, a knitting needle put in centre, comes out clean)
Allow to cool in tin for about 30 mins, turn out and cool on wire rack
Best the following day, and keeps well for 2 or 3 days--so ideal for taking to Guide camp (for Susanna, when young)!
Can be served with low fat creme fraiche
