Tuna with Mediterranean vegetables

Sally Bee's tuna with Mediterranean vegetables is a perfect lunch time treat for anyone wanting to make sure they keep a healthy heart!

Serves: 4

Recipe:

4 tuna steaks, 6-7 oz each30-45ml/2-3 tbsp olive oil3 garlic cloves, finely chopped1 red onion, finely diced60ml/4 tbsp dry white wine3 ripe plum tomatoes, chopped1 red pepper, sliced1 tsp dried Italian herbsFreshly ground black pepperFresh basil leaves, to garnish

Method:

  • Season the tuna steaks with pepper, set a heavy frying pan over high heat until very hot, add the oil and swirl to coat

  • Add the tuna steaks and press down gently, then reduce the heat to medium and cook for 6-8 minutes, turning once, until just slightly pink in the centre. Transfer the steaks to a serving plate, cover and keep warm

  • Add the diced onion, sliced pepper and garlic to the pan and fry for 4 minutes, stirring all the time, then add the tomatoes and wine and boil until it is reduced by half

  • Season with pepper and pour over the fish steaks. Serve garnished with fresh basil leaves. Gorgeous!
