Toby's salmon kiev

Here's a tasty and healthy dinner option from Toby Huntington-Whiteley that will keep you full and energised.

(Serves 4)

Ingredients:

4 salmon fillets (wild is best)4 tbsp pumpkin seeds4 tbsp sunflower seeds2 eggs, small2 tbsp Cajun spicesPinch of sea salt2 garlic cloves, crushed200g brown rice100g spinach300g green peas

Method:

  • Add the pumpkin seeds, sunflower seeds, Cajun spices and sea salt to a food processor and blend until the mixture forms a chunky powder consistency. Place the mixture in a shallow bowl and add in the crushed garlic.

  • In a bowl beat the 2 eggs together lightly

  • Dip each salmon fillet in the egg mixture and then in the seed crumb and place on a baking tray

  • Bake in the oven for 15-20mins at 180C

  • Meanwhile, cook the brown rice as per the cooking instructions on the packet

  • Either sauté or steam the peas and spinach to serve with the salmon and rice
