Gluten-free harissa chicken traybake
Toby Huntington-Whiteley's got a good square meal that feels like a treat without ramping up the calories - his gluten-free harissa chicken, roasted with veg.
(Serves 4)
Ingredients:
2 onions, quartered4 cloves of garlic, crushed4 chicken thighs2 sweet potato, sliced into wedges1 lemon, sliced into wedges1 courgette, sliced into batons1 pepper, sliced into strips4 tbsp harissa1 tbsp paprika2 tbsp coconut oil, melted
Method:
Arrange all the vegetables in a shallow baking tray, sprinkle on the paprika and drizzle on the coconut oil
Spread the harissa paste on the chicken thighs
Bake in the oven at 180C for 30-35 mins until the chicken and all the vegetables are cooked through.
